Soy sausage, Kale, and Potato Soup

Ingredients
1 tbsp Butter, unsalted 1 tsp Thyme, fresh 1 tbsp Rosemary 1 tbsp Olive Oil 3 clove Garlic 4 cup, chopped Kale 1 medium (2-1/2" dia) Onions, raw 3 cup diced Potato, raw 4 cup Vegetable Broth 2 serving Silk, Unsweetened Soymilk, 1 cup 6 patty Morningstar Farms Breakfast Patties (original sausage)
Directions
Melt butter and heat olive oil in a large soup pot over medium-high heat.
Add diced onions, garlic, chopped potatoes, pepper, rosemary and thyme; stir to combine and cook for 8 minutes, stirring occasionally.
Stir in kale and chopped sausage.
Add veggie broth and milk; bring to a boil.
Reduce to a simmer and continue to cook for 10 to 12 minutes, or until potatoes are fully cooked and tender.
Remove from heat.
Taste for seasonings and adjust accordingly.
Ladle soup into bowls and serve.



Serving Size: Makes 11 cups--so 6 servings of just less than 2 cups each
