3 boneless, skinless chicken breasts, cut to bite size1 pkg frozen Sweet Corn1 can (15oz) Fire Roasted Petite Cut Diced Tomatoes (with garlic and Chipotle add flavor) plus 2 cans water1 can black beans, rinsed16 oz Tomato Sauce 1 pepper Jalapeno Pepper, diced1 cup, chopped Onions, rawAdd 2 tsp each cumin and chili powder, 2-4 chicken boullion cubes, salt and pepper to taste3 cup Brown Rice, medium grain - cooked
In your crock pot, add all ingredients except frozen corn and cooked rice, starting with only 1/2 the spices and buillion for now. Cook on high 4 Hours Or low 7-8 hours. Taste and add spices as needed. Add corn and heat through. Serve over 1/2c rice.
