300 gram(s) (quorn) mince (by RITSON71) 4 serving frylight garlic infused oil 1 medium (2-1/2" dia) Onions, raw 1 clove Garlic 400 gram Tinned - Napolina - Plum tomatoes 344 gram(s) Aubergine (by RIPCURLGIRL) 175 gram(s) Tesco Light Choices Cottage Cheese (by ADZY86) 2 medium Egg, fresh, whole, raw 1 tsp Rosemary, dried
fry onion and garlic in the fry light then add quorn
add rosemary salt pepper and tomatoes bring to the boil and simmer for 20 minutes
fry sliced aubergine in fry light until brown on both sides
mix cottage cheese and eggs together
put quorn mixture in casserole dish cover with aubergine slices then top with cheese and egg mixture
bake in pre heated oven 190C/375F or gas mark 5 for 40 minutes or until top is set and golden brown
