Bite-sized Blueberry Vanilla Shakeology Muffins

2 scoops Vanilla Shakeology 1/2 C Almond Flour/meal1 C Oat Flour2 T Potato Starch2 T Ground Flax 1 tsp Salt 2 tsp Baking Powder2 T Xanthan Gum2 C Fresh Blueberries3/4 C Egg Whites 1 T Vanilla Extract 3 cup Milk -Silk Pure Almond Milk, unsweetened vanilla 2/3 C Honey
Preheat oven to 350
Mix together all dry ingredients in bowl. Add the blueberries and stir to coat.
Mix all wet ingredients in separate bowl. Add to dry ingredients and stir to combine.
Spray mini muffin tins. Add about a tablespoon of batter - or enough to fill about 3/4 - to each cup. Bake 15-20 minutes. Let cool and try really hard not to smother in butter - because after all, these are supposed to be healthy :D
