Healthy Nuts Salad

Ingredients
Red Ripe Tomatoes, 1 large whole Cucumber (peeled), 1 small Romaine Lettuce (salad), 1 cup, shreddedCarrots, 1 small Walnuts, 1 cup pieces or chipsSunflower Seeds, .5 cupOlive Oil, 1 tbsp Bean sprouts, 0.5 cup (optional)Capers, 1 tbsp, drained (optional)
Directions
Chop tomatoes, cucumbers, and lettuce. Add to a bowl. Using a vegetable peeler, "peel" stripes of carrots directly into the salad bowl. Add sprouts and capers, if available. Lightly toast walnuts and sunflower seeds. Add to the salad. Top with olive oil and mix. You can add salt and pepper to taste. If you can find it, grill a few pieces of haloumi cheese and garnish on the top of the salad. Enjoy as breakfast, lunch or dinner.
