Curried Basmati Rice

Ingredients
2 1tsp Canola Oil1 cup, chopped Onions, raw 1 cup, chopped Peppers, sweet, red, fresh .5 cup, chopped Carrots, raw 0.5 cup Peas, frozen .5 cup, diced Celery, raw 1 cup basmati rice1/2 tsp. salt.33 tbsp Curry powder1 1/2 cups water
Directions
Saute' vegetables in oil until just wilted. Add salt, curry powder, rice and water. Bring to a boil. Cover, reduce heat to simmer and cook for 25 to 30 minutes.
