Red and Green Salad (cucumber)

Ingredients
4 cucumbers1/2 red onion1 red pepper1 green pepper (optional)4 Sweet n- Low2tsp salt1/2c Light Mayo1/2 c Sour Cream1/4c Half and Half or 4 sm. containers
Directions
Makes 8- 1c servings. 160 cal and 6 net carbs

Slice cucumbers 1/8" thick
Slice onion thin
Slice red and green peppers into thin strips
Put in Big Bowl

Mix Mayo, salt, Half and Half, Sour cream and Sweet -n- Low. Pour over vegetables and mix so that all vegetables are coated. Refrigerate for 1 hour. Remix and serve.

optional: You can omit the sour cream and use skim milk to save calories.
