Low Carb Ricotta Crepe

Ingredients
.5 cup Ricotta Cheese, part skim milk 4 large Egg, fresh, whole, raw
Directions
Using an emulsion blender or blender blend the eggs and ricotta together. butter a large skillet. Pour 1/4 cup of batter into the center of the pan, allow it to spread out but not too thin, about 6" in diameter is about right. flip once the top is dry. Cook on second side until lightly brown. Serve with desired toppings, roll or fold.
