1/2 C Quinoa1 3/4 C WaterPinch of Salt1 15 oz Can of Garbanzo Beans, rinsed1 Red Bell Pepper, about 1 C diced1 Green Bell Pepper, about 1 C diced1/2 Cucumber, skin on, about 1 C diced3 Carrots, medium, about 1 C diced1/4 Purple Onion, about 1/2 C diced2 Tbs Chives, chopped1 medium tomatoes
Prepare the quinoa following the instruction on the package. Chill.
Meanwhile chop the vegetable into cubes.
Combine all the veggies, herbs and chilled quinoa. Stir until evenly distributed.
Cove and chill until read to serve.
