Quick Vegan & Gluten Free Tofu Scramble

0.25 Avocado0.25 block Tofu, firm 1 tsp Sriracha Hot Sauce (Rooster sauce) 2 serving Violife Vegan Cheddar Slices 1 tsp Engevita Yeast Flakes B12 1 serving Schar Rice Cake
Cut a block of extra firm tofu into 4 quarters. Put 1/4 of the block in a microwave safe dish and gently mash it with a fork. Add 1 tsp of Nutritional Yeast flakes and stir through. Put 2 slices of Vio life Vegan Cheddar on top. Put in Microwave for 1 minute. Stir again so the cheeze is melty through out and mixed with tofu. The texture is a bit like cheesy scrambled eggs. Put on top of two rice cakes. Add one quarter of a sliced ripe avocado in equal part on top of both tofu cheeze covered rice cakes. Top with hot sauce for a kick. Enjoy! When I need more calories, I might use half a block of tofu but keep everything else the same.
