Ingredients
1 tbsp Peanut Oil 3 tsp Garlic 3 tsp Ginger Root 28 fl oz Chicken Broth 2 cup (8 fl oz) Water, tap 1 unit (yield from 1 lb ready-to Chicken Breast (cooked), no skin, roasted .5 cup Chinese Noodles, cellophane or long rice (mung beans) 4 tbsp Cilantro, raw 1 tbsp Lime Juice, juice of 1 lime .5 tsp Salt 2 medium (4-1/8" long) Scallions, raw 45 gram(s) Peppers, hot chile, green, raw, 1 pepper (by 4565S568SDS) 1.5 tsp Lemongrass Paste
Directions
Heat oil in a large nonstick skillet over medium-high heat.
Add garlic, ginger, and lemongrass; saute 3 mins.
Add water and broth; bring to a boil.
Add chicken and pasta; cook 5 mins or until chicken is done.
Remove from heat; stir in remaining ingredients. Let stand 5 mins. Refrigerate leftovers.
