Makeover Macaroni & Cheese

Ingredients
2 cups uncooked elbow macaroni1 can reduced fat evaporated milk1 1/2 cups fat free milk1/3 cup egg substitute1 tablespoon melted butter8 ounces reduced fat process chesse (Velveeta), cubed2 cups shredded sharp cheddar cheese
Directions
Cook macaroni according to package directions, drain, and rinse in cold water. In a large bowl combine evaporated milk, fat free milk, egg substitute, and butter. Stir in process cheese, sharp cheddar, and macaroni.

Transfer to a 3 qt slow cooker coated with non stick spray. Cover and cook on low for 2 3/4 to 3 hours, or until center is set, stirring once.

    A serving size is only about 3/4 cup - a bummer when I could have eaten the whole pot! I loved it, but my kids didn't. - 2/16/10

    i was pretty pleased! but it is too thick, when i heated the mixture, it was burning at the bottom of the saucepan, i added a little water but it wasn't enough. so i think adding some liquid will make it more sauce like but it was rich and good! - 7/31/07
