Leftover Fish & Rice Salad

Ingredients
1.5 cup Brown Rice, medium grain 74 gram(s) bell pepper, red, sweet, raw 4 tbsp Extra Virgin Olive Oil 4 oz FISH - Mahi Mahi .75 cup Peas, frozen 3 tbsp (C) Vinegar, Red Wine (Gr Value) .25 cup, chopped Onions, raw
Directions
Mix all dry ingredients together. Make a vinegrette with the olive oil, red wine vinegar, salt, pepper with optional dry mustard and some chicken stock. Mix thoroughly. Let flavours mingle for an hour before serving.
