1.0 tbsp Coriander seed2.0 tbsp Curry powder1.0 tsp Ginger, ground1.0 tsp Pepper, black0.5 tsp Turmeric, ground2.0 tsp Salt2.0 tbsp Coconut Oil30.0 ounces Chicken Breast (cooked), no skin, roasted1.0 cup (8 fl oz) Chicken Broth0.5 cup, chopped Onions, raw4.0 cup, cubes Yams1.66 cup Del Monte Petite Cut Diced Tomatoes1.66 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
Saute onions in coconut oil until translucent.
Add spices, stir, and saute until fragrant.
Add chicken and sweet potatoes, stir to coat.
Add tomatoes, coconut milk, and broth, stir well. Bring to a boil and then lower heat to a bare simmer. Simmer uncovered for two hours or until potatoes are very soft and liquid has thickened.
