Creamy cucumbers

4.0 tbsp Sour Cream2.0 tbsp Cider Vinegar2.0 large (8-1/4" long) Cucumber (peeled)0.5 large Onions, raw6.0 tsp packed Brown Sugar1.0 cup greek gods greek yogurt
Slice cukes & onion & soak in brine over night. The brine is 2T salt per quart of water. You can let them soak overnight in a glass bowl covered with a plate unrefridgerated. Or you can use a weaker brine and refridgerate. The brine soak makes crisp pickles.
The next day rinse the mixture well & drain well. If too salty for you soak awhile in water. Drain at least a half hour in a colander & then between several layers of paper towels.
Mix the greek yogurt, sour cream, brown sugar, & vinegar together & add cukes & onions.

It was yummy and my husband loved it. I had cucumbers that needed to be used up. Didn't really have the time to soak them in the salt, but I did add salt to the recipe. I also used minced dehydrated onions since I didn't have any onions to chop up. Still yummy! OH and I added dill! - 2/8/17
