Chocolate Chip Cookie For One

1 ½ tbsp amber agave nectar1 tbsp canola oil1 ½ tbsp unsweetened nondairy milk (I used Coconut Dream)1 tsp vanillapinch Kosher saltpinch nutmeg1 tbsp brown rice flour½ tbsp teff flour1 tbsp ground tigernuts1 tbsp psyllium husk fibre1/4 tsp baking soda1 tbsp dark chocolate chips (Enjoy Life is cane-sugar sweetened)
Heat the oven to 350F and line a small baking sheet with parchment.
Beat together the nectar, oil, milk, vanilla, salt and nutmeg until smooth.
Add flours, tigernuts, psyllium and baking soda, mixing well.
Stir in chocolate chips.
Pat into a circle on the parchment (this doesn’t spread).
Bake 7 minutes, until golden.
Cool completely on the sheet.
Serving Size: Makes 1 large cookie
