Orzo Pasta Salad

Ingredients
1 lb of boiled orzo pasta1 red bell pepper chopped small1 yellow pepper chopped small1 bunch of scallions sliced small1 cucumber peeled and diced1 can of sliced olives drained (small 3.8 oz)1 carton of small Roma tomatoes, seeded and chopped (4)1 lemon, squeezed1-1/2 cup olive oil type dressing with oregano, greek or italian type, homemade or store bought works either way (I used Kraft Greek Vinaigrette non low-fat)2 tbsp parmesan cheese
Directions
In a large bowl, combine peppers, scallions, cucumber, olives, tomatoes, lemon juice, and 1 tbsp of parmesan cheese with 1 cup of dressing. Add orzo pasta.

Make night before, toss, add remaining ½ cup dressing before serving and top with remaining parmesan cheese.
