Ingredients
1.5 cup Squash - Yellow and Zucchini 0.5 cup Half and Half Cream 0.5 cup Colby and Monterey Jack Cheese shredded 1 large Egg, fresh, whole, raw 1 clove Garlic .25 cup, chopped Onions, raw 1 serving Pork Rinds(Baken-ets Fried Pork Skins)(14g) about 92 tbsp Extra Virgin Olive Oil
Directions
olive oil in skillet, over medium heat cook garlic and onion until tender, add diced squash, salt and pepper to taste, cover stir occasionally until tender about 5 minutes. Add crushed pork rinds and shredded cheese stir. beat egg into half and half add to squash mixture, stir together. Pour mixture into small 1 quart casserole dish bake at 350 about 45 minutes cover with foil so doesn't get too brown or dry while cooking.
