Apple & Parsnip Mash

1 serving Apple, Braeburn, Medium 300 grams Parsnips 15 grams Butter, unsalted 1 tbsp Pepper, black 1 tbsp Salt 30 g Semi-Skimmed Milk (ml) (UK)
Cut the parsnips with skin on into roughly 2cm chunks, discarding the root ends. Cut the apple(s) with skin on into roughly 3cm pieces, discarding the core. Add both to a pot with a lid and cover with 7cm cold, salted water. Bring the pot to the boil on a high heat. Once boiling, remove the lid and boil the parsnips and apples for 7-10 min, or until you can pierce them easily with a fork. Once fork tender, drain the parsnips and apple. Return both to the cooking pot with 15g (30g) butter and a splash of milk. Mash roughly and season generously with salt and pepper.
