Combine your vegetables, olive oil, & spices first into your crock pot or stock pot if your in a hurry, to soften them up before adding beans. I like to add tomatoes & beans last then smell the aroma to see what it might be missing. I then add a dash of allspice & Corriander. Maybe some cinnamon too.
