CURRIED CHICKPEA SALAD

Ingredients
For the dressing:3 tbsp tahini1½ tbsp extra virgin olive oil2 tbsp pure maple syrup2 tbsp waterjuice of half a lemon2 tsp apple cider vinegar1 tbsp curry powder1 tsp turmeric½ tsp saltfreshly ground black pepperFor the salad:2-15oz cans chickpeas, drained and rinsed½ cup chopped green onions½ small bunch parsley, chopped3 small carrots, chopped½ cup dried cherries⅓ cup cashews, chopped
Directions
Combine dressing ingredients. I used a jar and shook, but it might be best in a blender or food processor if you have one.

Combine salad ingredients and toss with dressing. Best if you let it sit a bit, so the dried fruit absorbs some dressing.
