Beet and Carrot Salad

Ingredients
4 beet (2" dia) Beets, fresh 2 medium Carrots, raw 0.5 cup slices Cucumber (with peel) 1 tsp PC Pure Sesame oil 1 serving Clemintine .125 tbsp Sesame Seeds 1 tbsp Green Onions
Directions
I used my spiralizer and made ribbons of cucumber and used the fine noodle attachment for the beets and carrots.
Dress with sesame oil, juice and zest of clementine. Garnish with sesame seeds and green onions. Salt and pepper to taste.
