Low-Fat Creamy Curry Chicken

Ingredients:Low Fat Plain Yogurt - .25 cup Lime Juice - 1 wedge Pace Chunky Salsa - Mild - 3 tbspAllspice - .5 tspMild Curry Powder - .5 tspBlack Pepper - .25 tspChopped Onions - .33 cupChopped Sweet Red Peppers - .25 cup Mozzarella Cheese, part skim milk, 1.5 oz Boneless, Skinless Chicken Breast tenders 10 ounces
Preheat oven to 400 degrees.
Mix the yogurt, salsa and lime juice together. Add all the spices and mix well. Place chicken in oven-safe dish. Pour yogurt mixture over the chicken. Top with chopped onions and peppers.
Bake for 20 minutes. During last minute of baking, pull the chicken out and top with cheese. Return to oven for last minute to melt cheese.
There will be juice in the pan, which is tasty served over a sidedish of brown rice, quinoa or barley.
