Darie's Marachi Chicken Rollups

Ingredients
2.0 tbsp Butter, salted2.0 tbsp Cream Cheese0.18 tsp Garlic powder1.0 carrot (7-1/2") Carrots, raw1.0 tbsp chopped Scallions, raw1.0 tbsp Parsley0.25 cup Bread crumbs, dry, grated, plain14.0 oz Chicken Tyson All Natural BoneLess SkinLess Chicken Breasts (GS)
Directions
Preheat oven 375 . Pound chicken breasts thin. Shred one whole carrot (about 1 Tbsp). Finely chop parsley . Melt 2 Tbsp butter. Soften 2 Tbsp cream cheese. Mix 1/8 tsp of garlic powder, carrot, parsley, scallions and cream cheese together. Spread cream cheese mixture on top of chicken breasts and roll up like a jelly roll. Brush melted butrer all over rolled chicken and press roll into bread crumbs. Place each rollup in a baking dish. Sprinkle remaining melted butter all over tops of chicken rolls. Bake about 30 minutes. Serve with rice. Salsa on top makes a nice change. This dish works well for serving to guests. Serving Size: 2 rolls
