Lentil salad with red pepper ,mint, and feta

Ingredients
Lentils (dry), 1 cup Olive Oil, 5 tbsp Red wine vinegar, 5 tbspGarlic, 2 cloves Onions, raw, 1 small *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" Goat Cheese, Semisoft, 8 oz 0.5 tsp ground cuminSalt and pepper to taste0.25 cup fresh mint
Directions
Pick over lentils, rinse and drain. Place in saucepan with water to cover by 2 in. Bring to a boil, reduce heat to medium low, and simmer uncovered 15-20 min. Drain and place in a bowl.

In a small bowl whisk oil, vinegar, garlic, cumin, salt and pepper. Add to lentils and toss. Add onion and bell pepper and toss. Let stand 20 min at room temperature before serving. Before serving add mint. 6 servings.
