Quiche - Broccoli

Ingredients
1/2 cup reduced fat bisquick3/4 cup chopped broccoli (drained)1 cup reduced fat or 2% cheddar cheese1 cup egg beaters (or egg substitute)1 1/2 cups evaporated skim milksalt and pepper to tastedash of nutmeg to taste
Directions
1. mix Bisquick, eggs and evaporated milk
2. fold in broccoli (or any other vegetable you like)
3. fold in the shredded reduced fat cheese
4. add spices to taste
5. pour into a pan prepared with non stick cooking spray.

Bake at 350 for 40-50 minutes in pie plate or 8 x 8 pan.

This makes 6 servings, but with the low calories and fat, you can afford 2 pieces if you like!

    Very good and very easy! I use one onion, two cups of broccoli, and 1/2 cup of flour mixed with 1/4 tsp baking powder in lieu of Bisquick. I also omit nutmeg. - 4/15/10

    We added a little more broccoli and used 1 cup skim milk instead of evaporated milk. Fantastic. Easy to make. Cooked at 375 for 30 minutes because we were extra hungry! - 1/18/09

    I really liked the texture of this quiche... very light and fluffy. I added mushrooms. It could use a little more flavour, so I may add more salt/spices next time. But overall, very good and I'll make again. - 1/13/11

    I made this using 2% milk and regular bisquick...(just because that is what was in the pantry already). I used the broccoli and also turkey bacon, but also added, parsley, and used parmesan cheese instead. It was very good. Will make again. - 10/25/10

    I substituted peppers, onions and sun dried tomatoes for the broccoli and added a few herbs and a good dose of garlic but this was phenomenal for the calorie content- great for breakfast, lunch or dinner! - 3/17/10

    I use real eggs (Good cholesterol and Iron) , Olive Oil (Good Fats) and Whole Wheat Flour for my quiches.

    As a French, I like to make my Quiches with Leeks or the Traditional Ham and Cheese, but I have never tried Broccolis. It sounds like a great idea! Thanks for sharing! :-) - 10/24/08
