Cucumber and tomato salad

Ingredients
1 large cucumber1.5 cups baby plum tomatoes, halved or quartered3 oz reduced fat feta cheese, crumbled1.25 Tbsp extra virgin olive oil2 Tbsp fresh basil, chiffonade3 cloves roasted garlicsalt and pepper to taste
Directions
Chop cucumber and tomatoes. Place in medium bowl and set aside. Whiz garlic and oil in mini food processor or blender. Pour over vegetables. Crumble feta over top. Add fesh basil and salt and pepper to taste. Lightly toss to mix. Makes 8 1/2 cup servings. Can be served chilled or at room temperature.
