My Ratatouille

Ingredients
1 eggplant, unpeeled (approx 1-1 Eggplant, fresh 2 cup, sliced Zucchini 2 cup Squash - Yellow and Zucchini 2 cup, strips Green Peppers (bell peppers) 3 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average 2 serving Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano 1 cup, chopped Onions, raw 2 tbsp Garlic powder 1 tbsp Salt
Directions
chop all veggies in large chunks
1 cup of water.
Put in dutch oven and in the oven at 350 for about an hour (until all veggies are tender) Can be served by iitself, over pasta or rice, over eggs...with a little cheese.
