Crispy Crusted Baked Chicken Breasts

4 boneless, skinless chicken breast halves2 T light mayonnaise1/2 c dry seasoned bread crumbs1 T grated Parmesan cheeseNon-stick cooking spray
Preheat the oven to 400 degrees F.
Mix crumbs and Parmesan cheese and place in a shallow dish.
Gently pound chicken to flatten slightly and to help ensure even baking. Spread light mayonnaise over the entire surface of the 4 chicken breast halves.
One at a time, lay chicken into the crumbs and turn to coat all sides. Press lightly to help the crumbs adhere.
Place chicken on a sprayed cookie sheet.
Bake at 400 degrees for 35 to 40 min until crumbs are lightly browned and juices run clear when you cut in the thickest part of the breasts.

My family liked this a lot and I will definitely make it again. The only thing I would add is salt and pepper to the chicken or breading mixture. Mine turned out a little bland when I made it exactly as written. The chicken stayed very moist, though, and after adding salt and pepper it was great! - 12/2/08
