Crispy Crusted Baked Chicken Breasts

Ingredients
4 boneless, skinless chicken breast halves2 T light mayonnaise1/2 c dry seasoned bread crumbs1 T grated Parmesan cheeseNon-stick cooking spray
Directions
Preheat the oven to 400 degrees F.
Mix crumbs and Parmesan cheese and place in a shallow dish.
Gently pound chicken to flatten slightly and to help ensure even baking. Spread light mayonnaise over the entire surface of the 4 chicken breast halves.
One at a time, lay chicken into the crumbs and turn to coat all sides. Press lightly to help the crumbs adhere.
Place chicken on a sprayed cookie sheet.
Bake at 400 degrees for 35 to 40 min until crumbs are lightly browned and juices run clear when you cut in the thickest part of the breasts.
Makes 4 servings.

    This is a go-to recipe for me, now! I put a cooling rack on top of the cookie sheet to help with crisping. I also add a dash of hot sauce to the mayo for some kick and use panko bread crumbs for extra crunch! - 8/9/11

    I used low-salt Ritz crackers for crumbs; garlic herb seasoning. Marvelous! Next time maybe I'll use taco type seasonings or curry...but I'll keep the Ritz crumbs. - 12/4/10
