Quinoa Salad w Black beans, corn and tomatoes

Ingredients
1 cup Bob's Red Mill Organic Whole Grain Quinoa (1/4 C dry = 1/2 C) 2 cup (8 fl oz) Water, tap 0.5 tsp Salt 1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 3 tbsp Lime Juice, juice of 1 lime 1.5 cup Great Value reduced sodium black beans 2 cup kernels Yellow Sweet Corn, Frozen 3 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average 8 oz Cheese, Kraft Pepper Jack 3 tbsp Extra Virgin Olive Oil
Directions
Add quinoa, salt and water in pan bring to boil, reduce simmer with lid on for 15 minutes.. Let cool. Chop red onion and add lime juice let sit for 15 minutes. Dice cheese into small cubes, in large mixing bowl; add frozen corn, cut up tomatoes, and onion . When quinoa has cooled mix into the rest and add the olive oil.
