Baked Zucchini Bites

1/2 cup Progresso Bread Crumbs - Italian Style 1/4 cup Parmesan Cheese, grated 2 large Eggs1 tsp Pepper, black 2 Zucchini (1 medium), sliced thin
Preheat oven to 475degrees. I did mine at 350 degrees. It worked out great.
Spray baking sheet with olive oil and set aside.
Slice zucchini fairly thin.
In a medium bowl mix together bread crumbs, parmesan cheese and pepper.
In another bowl whisk eggs.
Dip zucchini slices in the eggs and then coat with the bread crumb mixture.
Place on greased baking sheet.
Bake for 5 minutes then remove from oven and flip over. Bake for another 5-10 minutes until zucchini is crispy.
