Mango - Raspberry Jam

3 large mangos, peeled and diced1 cup raspberries 4 packets Instant Ginger Honey Crystals (like ASSI or Prince of Peace) 1/4 tsp cardamom1/4 cup waterzest and juice of 1 lemon 1 tbsp No-Sugar Needed Pectin (I used BallŪ)1/2 cup sugar1 tbsp minced lemon balm
In a pot, mash together mangoes, raspberries, Ginger Honey Crystals, cardamom, water, lemon juice and zest.
Whisk in the pectin until smooth.
Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.
Add sugar and return mixture to a full rolling boil.
Boil hard 1 minute, stirring constantly.
Remove from heat and stir in the lemon balm.
Can 10 minutes in a waterbath
