Ricotta Cloud Bread

Ingredients
3 Large Eggs 3 Tbsp whole milk Ricotta Cheese1/4 tsp Cream Of Tartar Pinch of Salt and other seasonings if desired1/2 packet Stevia In The Raw Sugar Substitute (optional)
Directions
Separate eggs. Add cream of tartar to whites and beat until stiff peaks form. In another bowl beat yolks with ricotta, salt, and stevia. Add other seasonings if you would like (completely optional). Gently fold whites into yolk mixture being careful not to over mix. Spoon 10 even mounds about 2" apart on parchment paper lined cookie sheet. Bake on middle rack at 300 degrees for 20 minutes, then move to top rack and broil until tops brown slightly.
