Soba Noodles with Pork Tenderloin

1.5 T grapeseed oil1.5 lbs pork tenderloin trimmed10 oz shitake mushrooms1 large onion sliced vertically6 cloves garlic, minced1 T grated ginger3 c bean sprouts, rinsed1/2 c light soy sauce3 T mirin1/4 c rice vinegar7 oz soba noodlessalt
Makes about 6 servings
Mix garlic, ginger, soy sauce, mirin, and vinegar in a small bowl - set aside (sauce mixture)
Boil noodles in salted water
While cooking noodles -
Saute Pork, until no longer pink, set aside covered. Saute vegetables until mushrooms and onions are golden brown. Add pork, bean sprouts and sauce mixture. Cook for 2 minutes, toss with drained noodles. Serve.
Drain noodles, toss with pork, veggies and sauce. Serve.
