Crockpot Southwestern Beef Short Ribs

Ingredients
3 lbs English cut beef short ribsRub2 tsp ground cumin2 tsp chili powder1 tsp oregano2 cloves garlic, minced1/4 tsp red pepperSauce1 cup salsa (I used medium)1 cup tomatoes with chilies1/4 cup cider vinegar
Directions
Mix rub ingredients and rub onto surface of short ribs. Place ribs in crock and cook on HIGH for 2 hours. Mix salsa, tomatoes and vinegar. Pour over ribs and lower temperature to LOW. Cook 4-6 hours until ribs are tender. Serve over rice (not included in the ingredients).

    we really liked this - it was very easy to make and Very Different - hubby said "vinegary". I used boneless short ribs ( English Style) -removed lid to cook the juices down - placed the pot in the fridge & removed the set grease. Served over brown rice ,& side of Cabbage,onions &Bell pepper. - 1/30/12
