Luscious Lentils

Ingredients
1 cup of dried lentils3.5 cups of water1 small onion, diced.5 red bell pepper, diced3 whole garlic cloves, minced2 tbsp. extra virgin olive oil1 tsp. salt1 tsp fresh ground black pepper
Directions
In a medium sized skillet, saute' onions and peppers and garlic in 2 tbsp. olive oil over medium heat until tender. In a medium sauce pan, combine lentils and water. Bring to boil over high heat, reduce heat, add vegetables, cover and simmer until reduced (about 20-25 minutes.)

    Flavor wasn't bad, though I did need to add more spices to kick it up. Watch out on the cooking time. Actual time (and liquid needed) varies based on your particular beans. The bag recommended a 2:1 water to bean ration & 15 min to cook. Mine turned out soupy, slightly mushy, but still good. - 9/12/09

    Made this for lunch yesterday. Based on reviews I read before making this, I cut down water to 2 cups, added a teaspoon of Turmeric, omitted salt and added a teaspoon of Mrs. Dash original. Also increased garlic to 5 cloves. It was good. My son really liked it, too. - 8/8/13

    I couldn't make this become flavorful. :( I really tried. I put Goya Sazon in, leftover Goya tomato sauce and green chiles, lots of cumin, garlic powder, onion powder, extra peppers and fresh garlic, extra black pepper... and it was so bland. It was edible, but no one will prob eat the leftovers. - 9/19/12

    Mine came out very watery. I'd reduce the water quite a bit and count on spicing it up -it's a bit bland. But easy and an excellent starting point. - 4/26/12

    Awesome recipe. I made them using organic chicken broth instead of water, added 1/3 cup of barley, a chopped carrot, celery, mushrooms, and extra firm tofu. Wonderful! - 5/30/11

    Loved this recipe. Did not use the peppers as my son ate it before I could use it. It came out a bit soupy, next time I may reduce the water by 1/2 cup. It was delicious. Served it with lean ham. - 1/21/11

    I made this but omitted the salt and added 2 tsp each of ground cumin and corriander. I also omitted the peppers and added in mushrooms. I upped the lentils by 1/2 c. I really liked how it turned out and it was a nice quick accompanyment to the lamb steaks. - 6/24/10
