Sautéed Gnocchi with Pomodo Crudo

1 batch Always-Fluffy Gnocchi, if frozen do not thaw3 tbsp olive oil 3 large tomatoes, diced1 cup grape tomatoes, halved¼ tsp sugar2 cloves minced garlic1 tbsp balsamic vinegar10 leaves basil, minced5 leaves lemon balm, minced1 sprig thyme, leaves stripped
Heat olive oil in a large pan over high heat.
Add the gnocchi in one layer and sauté about 5 minutes, stirring frequently, until warmed through, light brown and crispy.
Add the tomatoes, salt, pepper, sugar, garlic and vinegar.
Toss to heat the mixture through.
Remove from heat and stir in the herbs
Serve immediately.
Serving Size: Serves 10 as a starter, 6-8 as a main
