Healthy Baked Mac 'n' Cheese

Ingredients
12 oz. uncooked macaroni1/2 cup fat-free sour cream12 oz. fat-free evaporated milk8 oz. low-fat shredded cheddar cheese1 tbsp dijon mustard1/4 tsp salt (I prefer kosher salt)1/4 tsp black pepper2 tbsp dried bread crumbs2 tbsp grated parmesan cheese
Directions
Preheat oven to 350 degrees. Spray a 3-quart casserole dish with nonstick cooking spray.

Cook macaroni according to package directions, omitting any added fat or salt; drain and transfer to a large bowl. While pasta is still hot, stir in sour cream; set aside.

Heat milk in a small saucepan over medium heat until tiny bubbles appear just around the edges. Reduce heat to low, add cheese, and simmer until cheese melts, stirring constantly with a wire whisk, about 2 minutes; remove from heat and stir in mustard, salt, and pepper. Add cheese mixture to pasta; mix well. Transfer to prepared casserole dish. Combine bread crumbs and parmesan; sprinkle over pasta. Bake until top is golden, about 30-40 minutes.

    This is a good base to add stuff to. I've added ham before and some center cut bacon. Oh I also added nutmeg to the cheese sauce. - 6/2/11

    I sauteed garlic and chicken breast in a little olive oil (can use pam olive oil spray)and added to the recipe. I also added some fresh baby spinach. This is a great base recipe. - 7/3/10
