Healthy Grain Apple Muffins Reduced Calorie

Ingredients
4 eggs or Egg 1.75 C Raw Sugar or Pure Maple Syrup1 C unsweetened applesauce1 -1/4 tsp Vanilla6 Fresh Apples, chopped, skins on (can also use Zuchinni 4-1/4 C)1 C Spelt Flour1 C Long Grain Brown Rice Flour or Kumut Flour1 C Aramath Flour1 tsp Salt2 tsp. baking soda2 tsp. baking powder1 Tablespoon ground Cinnamon1.5 C chopped nuts1-1/3 C Golden, Seedless Raisins3/4 C unsweetened coconut shreds
Directions
Mix top 4 ingredients in a large mixing bowl till the consistancy of mayonaise with beaters.

Add remaining ingredients and mix with beater starting in slow till flour is mixed and then medium to diustribute evenly.

Spoon into cupcake papers. (Depending on how many cupcake trays you have, cooking can be 20-60 mintues. Only 20 if you can fit 3 trays or 60 for 1 tray, three times.)

Bake at 350 degrees F for 20 minutes.


Nutritional info based on using: Apples, brown rice flour, barley flour, Aramath. You can use just spelt four and Aramath too. I love this with pecans or walnuts.
