Ham, Egg & Cheese Muffin Cups

7 serving 1 large egg (per the egg board) 50g 0.25 cup Milk, nonfat (skim milk) 0.75 cup Kraft 2% Shredded Cheddar Cheese 1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 tbsp Extra Virgin Olive Oil 0.125 tsp Garlic powder 0.5 tsp Tabasco Sauce 0.5 tsp Pepper, black 1 tbsp Parsley, dried 4 serving Ham - Hillshire Farm Deli Select Ultra Thin Honey Ham (2 ounce serving)
Sauté diced onions in Olive Oil until clear, add diced ham to the pan and cook until slightly brown and then set aside to cool.
Set oven to 350 degrees.
Combine eggs, milk, tabasco, garlic, parsley, and pepper in a bowl. Add the shredded cheese and stir together.
Slowly add the cool ham mixture to the egg mixture and then spoon into 12 cup muffin tin,
Place in oven on center rack and cook for 15 minutes. When done the eggs should be just barely done on top and slightly dry. They will cook more from the carryover heat when you take them out of the oven. DO NOT OVERCOOK!
