Ingredients:8 ounces of minced chicken mix ( which is a mix of shitake mushrooms, water chestnuts, & minced chicken )1 tablespoon of wok oil1/2 teaspoon of minced garlic2 tablespoons of diced green scallions2 ounces of our minced chicken sauce (see below)1 cup of rice sticks ( prepared)1 teaspoon of sesame oilMinced Chicken Sauce:1/4 cup of mushroom soy sauce 1/4 cup of oyster sauce1/2 tsp of white pepper1/4 cup of cooking rice wineT of sugarHeat mixture on medium high heat at low boil for about 6 to 8 minutes. (can cool and refrigerate additional sauce) Preparation:Cooking Procedure:Heat wok until white whisk of smoke appears Add 1 tbs of wok oil Add garlic 5-10 seconds Add minced chicken mix and sear Add 1/4 ounces of minced chicken sauce, stir and incorporate. Add 2 tbs of diced green scallions Add 1tps of sesame oil and plateThis recipe serves 2. Multiply accordingly for additional guests.

Firstly, this was a horrible write up of a recipe. I could eyeball it, but for others, increments of chicken, shrooms, etc would be helpful.
This was edible, but NOTHING at all like Pei Wei. The title should be modified to "Asian Lettuce Wraps" as it is deceiving the way it is. Sorry. - 5/10/17

How do you make the 8 ounces of minced chicken mix? Do you buy it in the store? Or do you just guess and make it on your own? If so, do you have some measurements you could pass along? Thanks! Can't wait to make these when I figure out that first step! - 8/1/12

I typically measure my chicken 8oz is .5lbs with a scale and then either mince it with a knife or use my food processor. You want the chicken to be pea-sized.

This is excellent but never says what to do with the rice sticks. I don't seem to notice them at Pei Wei's. So what's the deal? - 1/5/12

Yes, at Pei Wei the entire chicken/mushroom concoction is served on a bed or rice noodles. You fry the rice noodles and they resemble styrofoam ;-)
