2 ears of corn, remove silk and soak in water2 tomatoes chopped3 scallions thinly slices2 cloves of garlic finely chopped1 jalepeno pepper seeds and veins removed and finally choppedcilantro finely choppedjuice from 1 lime1/2 cup black beans ( optional)
Take 2 ears of corn that has husk on and silk removed and has been soaking for 30 minutes. Grill on a hot bbq for 30 minutes. ( you can also raost some red bell pepper for pesto or to put on sandwiches) When done remove kernals. Add all other ingredients and let set in fridge for at least 1 hours overnight is better. Enjoy
