"Coffee Shop" Biscotti

½ cup spelt flour½ cup white whole wheat flour1 tsp baking powder1 tsp nutmeg¼ tsp salt2 tbsp ground flaxseed2 ½ tbsp melted tallow (for "doughnutty" flavour) or butter⅓ cup granulated sugar½ tsp vanilla extract½ tbsp ground espresso (not instant)¼ cup tigernut flour3 tbsp kinako2 tbsp caramel or toffee bitsroyal icing
Preheat the oven to 375 degrees F (190 degrees C). Line a cookie sheet with non-stick foil.
On the foil lined cookie sheet, form dough into a log about 8 ½ inches long by ½ inch thick.
Top generously with coarse sugar.
Bake for 25 minutes. Let log cool for about 20 to 30 minutes.
Set on a cutting board and slice crosswise into ½” slices.
Stand the slices on the baking sheet so that both sides are exposed and bake for 10-12 minutes.
