Rustic Chicken Soup

Ingredients
1 lb Chicken Breast, roasted, cubed 1 lb Baby Carrots 2 lbs Roasting Potato Mix 1 pint Mushrooms, sliced1 cup Onion, chopped 1 cup Celery, diced 1 can Chicken Broth 1 cup White Wine4 cloves Garlic, sliced 2 tbsp Herbs de ProvinceSalt & Pepper to TasteWater to cover
Directions
In a large pot, add chicken, vegetables, broth, wine, spices and enough water to cover. Bring to a rolling boil over high heat. Reduce heat, cover and simmer 2-3 hours until vegetables are tender. Add water as needed to cover chicken and vegetables.
