Quinoa Salad

Ingredients
1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1 cup, chopped Onions, raw 1 tbsp Coconut Oil 1 cup Beans, black 8 oz Tomato, grape (3oz = appro 12 tomatoes) 4 tbsp Pine Nuts 2 fruit without skin and seeds Avocados, California (Haas) 1 cup, chopped Peppers, sweet, red, fresh 12 tbsp Cilantro, raw 2 stalk, large (11"-12" long) Celery, raw 1 lime yields Lime Juice 3 tbsp Extra Virgin Olive Oil
Directions
Bring Quinoa and 2 cups water to a boil, reduce to a simmer approximately 10 minutes. Strain and rinse quinoa under cold water and set aside. In a medium skillet, heat coconut oil (or sub olive oil) over medium heat and saute red onions 3-5 minutes, set aside to cool. In a large mixing bowl, mix all ingredients and toss well.
