1 tbsp Olive Oil 1.5 medium (2-1/2" dia) Onions, raw 50 g Curry Paste Yellow Mae Ploy 1 tsp Ginger Root 3 clove Garlic 1 tbsp Fish Sauce 1.5 tblsp Palm Sugar2 small Potatoes, raw, cubed 1.5 small Carrots, raw, chunked6 medium Mushrooms, fresh 1 Spring OnionGreenseas Tuna Chunks in Spring Water (420g), mostly drained425 g chick peas (garbanzos), canned 400 g light coconut milk (400ml can) 1 can water
Directions
Sweat onions and fry off aromatics. Add fish sauce, palm sugar then veggies, tuna, chick peas, coconut milk and water. simmer 20 - 30 mins.
