Baked Shrimp Scampi

Ingredients
16 large Shrimp, raw 3 tbsp Olive Oil 1 fl oz White Wine 1 dash Pepper, black 1 dash Salt 12 tbsp Butter, unsalted 4 tsp Garlic 6 tbsp chopped Shallots 3 tbsp Parsley 1 tsp Rosemary .25 tsp Pepper, white 1 tsp Lemon Peel 4 tsp Lemon Juice 'Real Lemon' 100% juice 1 large Egg Yolk 60 gram(s) Bread Crumbs, Panko (Japanese style), Kikkoman-1/2 cup, 30g
Directions
Shrimp area the jumbo size. Very large.

Preheat oven to 425 degrees F.

Peel, devein and butterfly shrimp leaving the tails on. Place the shrimp in a bowl and toss with olive oil, wine, salt and pepper. Allow to sit at room temperature while you make the butter and garlic mixture.

In a small bowl mash the softened butter with the gaarlic, shallots, parsley, rosemary, white pepper, lemon zest, lemon juice, egg yolk, salt and pepper until combined.

Starting from the outside in arrange the shimp in a single layer with the cut side down and tail up. towaards the center of the dish. Pour the reaing marinade over the shrimp. Spread the butter mixture over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned broil for approx 1 minute. Serve with lemon wedges
