Keto/Low Carb Pots de Creme

Ingredients
600 gram Co-op British Double Cream (by STEELSKIN) 6 large Egg Yolk 30 gram(s) Erythritol - adjusted for 0 carbs (by SCRAPPYMELLA) 1 serving vanilla bean/pod (by SHIRHPP)
Directions
Preheat the oven to 150C. Split the vanilla pod and scrape out the seeds. Put the cream vanilla seeds and pod into a saucepan and heat gently. Whisk together the egg yolks and erythritol. Remove the vanilla pod and slowly pour the cream over the egg mixture while whisking. pour into 8 ramekins and place into a roasting pan. Pour cold water into the pan to halfway up the ramekins. Bake for 40mins. Remove from the pan and leave to cool, then chill for several hours.
