Cheesey Beef Enchilada

Ingredients
1 lbs 93% lean ground beef1 C chopped onion4 T Light Philadelphia cream cheese6 Mission whole wheat carb balance fajita tortilla1 19oz can of Old El Paso Enchilada sauce1/4 C shredded cheese
Directions
400 degrees
Makes 6 servings of 1 enchilada each

Brown ground beef with onion season to taste
Add cream cheese and a little of the enchilada sauce
Roll beef in tortillas and place in bottom of 9X13 dish
Pour remainder of enchilada sauce over filled tortillas
Bake covered on 400 degree until bubbly

    Very good and easy to make. I only added about 1 tbsp of cream cheese but also added a slice of pepper jack cheese to spice it up a bit. I used whole grain flat out wraps. Will be a regular dinner for us. - 2/12/09

    I make this and after the meat is done I put in some refried beans then a little shredded cheese instead of cream cheese. It is yummy ... on the top sprinkle with the remainder sauce and little more cheese... - 1/7/10
