Mushroom, pepper, and rice skillet

Ingredients
Pre-cooked chicken, about 1 cup1 red pepper, chopped1 yellow pepper, chopped1 orange pepper, chopped1 package Woodstock Organic Mixed Mushrooms (frozen) 2 packages Seeds of Change Seven Whole Grains2 tsp Turmeric, ground2 tsp Coriander, groundSalt and Pepper to taste1 tbsp Extra Virgin Olive Oil
Directions
Heat up olive oil in a large skillet on medium heat, and add the frozen mushrooms. While those are cooking, chop the peppers and add them to the skillet. Stir well, and add the turmeric and coriander. Cook for about 10 minutes or until the mushrooms are completely thawed and all the excess liquid has evaporated. Add the chicken and and grain blend, and cook until heated through. Season with salt and pepper, and serve!
